Buckwheat is our North Star

As flavor seekers and food lovers, each journey of ours is guided by the possibilities of this amazing bee-loving crop,
that also goes by the name Soba.

We’ve crafted crackers, crisps, noodles and sips.
Our love for this plant has taken us far...this time, to the beverage aisle.

We’re brewing something familiar, but new:
sobacha but sparkling.

"Sobacha" is Japanese for

Inspired by the time-honored delight of this superfood and our wonder for the world around us, SobaSparkle is our love letter to beloved moments in nature.

We’ve blended in ingredients like balsam tips, honey, ginger and wild blueberries to sparkle and sing with subtle notes of buckwheat.

It’s simple, it’s complex. It’s everything we wanted it to be. We hope you love it as much as we do.

From Bread To Buckwheat

our journey wasn’t always linear, but it was always delicious

The fire for flavor was lit, quite literally, in our Pennsylvania backyard with a wood fired oven, inspired by a lesson from the “Johnny Appleseed” of hearth-bread ovens, Alan Scott.

DURING THIS TIME WE EXPLORED WHEAT GENOTYPES, SOURDOUGH CULTURES, STONE MILLING AND BREAD FERMENTATION.

This exploration took us across the country, and around the world, as it set the stage for food and farming forays to come.

We continued to follow our passion for organic food, which eventually landed us into the world of Sustainable Agriculture, and soon after, organic dairy! What goes better with fresh bread, than fresh milk and aged cheese?

We relocated to the verdant grazing lands of Vermont and dedicated our time to dairy farming, cheesemaking and raising our daughters.

As it turns out, karen had a particular talent for cheesemaking, winning a number of awards for her unique, & never been-done-before cheeses.

Since her cheeses had never-been-done-before, it was only natural that Karen crafted a never-been-done-before cracker to match. Inspired by the abundance of locally grown Buckwheat, Karen set out to create a crisp that could hold up to artisanal cheeses, while still holding its own.

The taste was undeniable, and the rest was history. We used our combined expertise to grow and scale the Maine Crisp Company.

But something was still missing.
We were thirsty.

The health of the soil is reflected in the taste of the bread, the milk, the cheese, the crackers, and now, SobaSparkle.

It is our greatest hope and intention that in each sip of SobaSparkle, you can taste the craft, care, love, and respect for food gifted by nature.
